Tabouli always makes a nice appetizer or side dish. This is another recipe from a Food for Life class participant.

1 cup bulgur
2 cps water
zest from 1 lemon
juice from 2 lemons
1 large bunch of flat leaf parsley, minced
1 small sweet onion, chopped
5 sprigs fresh mint, minced
2 Roma tomatoes, chopped small
salt and pepper to taste
(recipe called for a touch of olive oil. Try it without the oil!!!)


Bulgur is a wonderful grain that cooks very quickly. Boil the 2 cups water and pour over the bulgur in a bowl. Cover the bowl tightly and let sit for 30 minutes while you prepare the rest of the ingredients. The bulgur cooks while it sits!
Mix the bulgur with the rest of the ingredients and chill to allow flavors to blend.
