A Food for Life recipe! Mangoes provide a healthful dose of beta-carotene, one of those powerful antioxidants that fight free radical damage.

1 large mango or about 1 cup of frozen mango
1 large tomato, seeded (optional), and diced
1/4 cup minced fresh cilantro
3 T freshly squeezed lime juice
1 T minced jalapeno chile, or 1/2 tsp crushed red pepper flakes
1/4 tsp salt


Peel the mango, and cut into cubes. Add all the remaining ingredients and stir to combine. Let stand for 15 minutes to allow the flavors to meld and develop.

Note: You can substitute one large peach for the mango to make a Peach Salsa.
