This recipe from the famous and passionate, Dr. Joel Fuhrman, author of "Super Immunity".

Serves 2:

5 ounces baby spinach or kale
1 banana (frozen)
1 cup frozen or fresh blueberries
1/2 cup unsweetened non-dairy milk
1/2 cup pomegranate juice or other unsweetened fruit juice
1 T ground flaxseeds


Blend all ingredients in high powered blender.
Note: I like to use frozen banana chunks in the smoothie, and kale leaves. You can double the recipe to make more yummy servings. Smoothie will keep in frig for 2 days. No more than that!

When your bananas ripen and you go - can't eat that - cut them in small chunks and freeze. Ripe frozen bananas make a great addition to smoothies, and make a fabulous non-dairy ice cream when blended with frozen fruit and a little vanilla. So much better than calorie, fat laden dairy ice cream.
