Years ago when I worked in Sandwich, there was a neat little restaurant on Rt. 6A. Known for its scrumptious baked goods, I became hooked on their Morning Glory muffins which simply melted in your mouth! Here's a loaf filled with similar but healthier ingredients, but still possessing that melt in your mouth taste!


1 cp organic white flour
1 cp organic whole wheat pastry flour
2 tsps ground ginger
2 tsps baking powder
1/2 tsp baking soda
2 tsps ground cinnamon
1/2 tsp salt
2/3 cp packed light brown sugar
1/2 cp applesauce
1 8 oz. can crushed pineapple, drained, juice reserved
1/2 cp carrot juice
1 tsp vanilla extract
1 cp finely grated carrots
1/2 cp raisins
1/2 cp walnuts, chopped


Preheat oven to 350. Whisk flour, cinnamon, ginger, baking powder, baking soda, and salt in large bowl.

Whisk sugar, applesauce, 1/4 cp reserved pineapple juice, carrot juice, and vanilla in separate bowl. Fold sugar mixture into flour mixture. Stir in crushed pineapple, carrots, raisins, and walnuts.

Fold ingredients till moist. Pour batter into loaf pan and bake for 50-60 minutes. Test for doneness with toothpick. Cool in pan 10 minutes, then remove on rack to cool completely.
