This delicious Banana Bread has been adapted from my dusty, old Better Homes & Gardens Cookbook.


Preheat oven to 350. Grease bottom and sides of loaf pan.

1 cp whole wheat flour
1 cp unbleached white flour, organic
1 1/2 tsps baking powder
1/2 tsp baking soda
1/4 tsp cinnamon
1/8 tsp nutmeg
1/4 tsp salt
2 T ground flaxmeal mixed with 6T very warm water
1 1/2 cps mashed bananas (about 4-5 medium)
3/4 cp sugar
1/2 cp melted non-dairy margarine
1/4 cps chopped walnuts (optional)


Combine flours, baking powder, baking soda, cinnamon, nutmeg and 1/4 tsp salt. Make a well in center of flour mixture and set aside.

In small bowl whisk the ground flax with the very warm water till gel-like. Combine the flax mixture, using fork or wooden spoon, with the mashed bananas, sugar and melted non-dairy margarine. Add this mixture to the flour mixture and stir just until moistened. (The batter should be lumpy.) Fold in nuts if using. Spoon batter into prepared pan and bake at 350 for 55-60 minutes or till wooden toothpick inserted in center comes out clean. When done remove from oven and cool in pan on wire rack for 10 minutes. Remove from pan and cool completely on wire rack.

This is a lovely mid-morning treat!
