John H. brought these scrumptious veggie burgers to our June 2014 Green Nosh, AND he brought all the trimmings - some hearty whole wheat rolls, his own homemade non-dairy mayo, and all the condiments. Very yummy!! Don't let the long list of ingredients scare you. These non-burgers are easy to prepare and loaded with healthy fiber, antioxidants, and protein. Compare these to an Angus Beef Burger - NOT!!

These burgers can be made ahead and baked. Can remain in frig for up to 2 days or kept in freezer for up to 3 months. To reheat, either in microwave for 2 minutes or on a dry griddle for about 5 minutes.

2 T ground flax seed + 3 T warm water
1 14 oz firm tofu, well drained
1 14 oz can black beans
1 cup cooked lentils
2 cups quick cooking rolled oats
1/2 cup shredded carrots
1 10 oz package of frozen chopped spinach, thawed, drained, and squeezed dry
1 large onion, chopped
1/2 pound mushrooms, chopped
3 garlic cloves, crushed or minced
2 T low-sodium soy sauce
2 T vegetarian Worcestshire sauce
2 T Dijon mustard
1 tsp chili powder
1 tsp paprika
1 tsp lemon juice


Mix ground flaxseed and water and set aside as an egg replacer.

Preheat oven to 350. Prepare two nonstick or parchment lined baking sheets.

Put onions, mushrooms, and garlic in a large nonstick skillet with 1/2 cup water. Cook over medium heat stirring frequently, until all the liquid has evaporated, 10-12 minutes.

Mash the tofu in a large bowl with a potato masher. Mix in the beans, lentils, rolled oats, shredded carrots, and spinach. Add the onion-mushroom mixture to the tofu/bean mixture.

In a separate bowl, mix the soy sauce, Worcester sauce, mustard, chili powder, paprika, lemon juice and the ground flax with water mixture.

Pour the liquid mixture over the tofu/bean mixture and fold the liquid into the mixture. Do not use an electric mixture.

Use a non-stick spoon to add patty quantities to the bake sheets. Use a rubber spatula to shape each of the patties. You should obtain 18-24 patties. Bake for 20 minutes and flip the burgers. Then, defrost them in the quantities you want to serve. Heat the defrosted burgers for 45-50 seconds in the microwave.
