There are oodles of veggie burger recipes out in plant based land. Try a variety till you find the one that satisfies your taste buds.

1 medium celery stalk
1 medium carrot
4 green onions
1 (14 oz. can) black beans, rinsed and drained or 1 1/2 cups cooked black beans
1 (12 oz. can) ro-tel tomatoes, drained
1 cup cold (pre-cooked) brown rice
small bunch fresh parsley OR cilantro
1/2 tsp cumin
2 tsp nutritional yeast
2 tsp onion powder
2 tsp garlic powder
2 tsp egg replacer powder
3 T vital wheat gluten
1 tsp salt


Preheat oven to 450.

Pulse the celery, carrot, and green onions till very small. Transfer the veggies to a medium bowl. Add the remaining ingredients to the food processor and pulse to chop, then blend to combine. (The mixture will ball up like a dough.) Mix everything together in large bowl with the chopped veggies, and shape into 1/2 cup burger patties.

Bake on the top rack of the oven for 15 minutes. Turn burgers over and bake 15 minutes more. The broil on low for 3 minutes to brown (if desired).
