My grandchildren love this recipe!

3 T ground flax meal
9 T very warm water
1 cup organic white flour
1 1/4 cups organic whole wheat pastry flour
1 tsp baking soda
1 tsp salt (optional)
3/4 cup Earth Balance non-dairy margarine, softened
1/2 cup organic sugar
1/2 cup light or dark brown sugar
2 tsp vanilla extract
16 oz non-dairy chocolate chips


Preheat oven to 375.

Mix the ground flax meal with the very warm water and set aside (giving it time to gel). (This is a great egg substitute!)

In a large bowl, cream together the sugars, the softened margarine, and the vanilla extract. In another bowl, mix the dry ingredients together - the flours, baking soda, and optional salt.

Then add the ground flax mixture into the wet ingredients and mix well. Gradually add the dry ingredients with the wet. Before it is completely mixed, add the chocolate chips, mix well, and you will have a lovely cookie dough. (I like to use a rounded tablespoon to form the dough on the cookie sheets.)

Bake the cookies for 8 minutes, remove from the oven, and let them sit on cookie sheet for another 2 minutes before putting on rack to cool.

(When my grandchildren visit, they always ask for these cookies. Their thumbs up is all I need to keep baking.)
