A healthy afternoon snack when the children come home from school, or the grandkids visit or ........for anyone!
2 tsps ground flax meal
2 T very warm water
1 cup regular or quick cooking oats
1 cup whole wheat flour
1/2 tsp baking soda
1/2 tsp baking powder
1/2 tsp salt
1 tsp cinnamon
1/4 cup raisins
1/2 tsp vanilla
1/2 cup maple syrup or agave nectar or brown rice syrup
1 banana mashed
1/2 tsp lemon juice
Preheat oven to 375.
Mix the ground flax with water and set aside.
In a large bowl mix the oats, flour, baking soda, baking powder, salt, and cinnamon. Then add the raisins.
With a whisk mix the syrup, vanilla, mashed banana, and lemon juice. Then add the ground flax mixture, and mix all well.
Pour into the dry mixture and stir until ingredients are combined. Do not overmix.
Roll into balls, flatten and bake for 8 - 12 minutes.
