This tasty treat came from Emily Richard who formerly worked for The Cancer Project in D.C. Can you imagine?....a chocolate chip cookie that tastes like more, and is full of good, hearty high fiber grains and cereals??

1 1/2 cps whole wheat pastry flour
1 tsp salt (optional)
1 tsp baking powder
1 cp brown sugar
1/4 cp white sugar
1 banana, mashed
1/4 cp Earth Balance, dairy free margarine
1 1/4 tsps vanilla
1/2 cp old fashioned oats
1 cp high fiber cereal (I use Ezekial grain cereal)
1 cp chocolate chips
1/4 cp nuts, chopped (optional)


Preheat oven to 375.

Combine flour, salt and baking powder in large bowl. In smaller bowl, mash the banana, then add the sugars, margarine, and vanilla to the mashed banana. Mix the dry and wet ingredients together. Slowly add the oats, the cereal, chocolate chips and nuts. Spoon into 1 1/2 inch rounded balls. Flatten slightly and bake for 8-10 minutes.
