- 11 - 12 Medjool Dates of 24 Deglet Noor dates, chopped
- 1 cup oat flour or rolled oats ground into flour
- 1 1/2 cups old fashioned oats
- 2 tsps baking powder
- 1 tsp cinnamon
- 1/4 cup plus 2 almond butter (or for lower fat, use 1/2 cup applesauce in place of almond butter)
- 1 1/2 tsps vanilla extract
- 1/2 cup raisins or dried cranberries or chopped dried apricots
- 1/2 cup walnuts, chopped
- Place dates in small bowl. Cover with water and let sit for 15 minutes to soften.
- Preheat oven to 350. Line baking sheet with parchment paper.
- In medium bowl whisk the oat flour, oats, baking powder and cinnamon.
- Pour water off the dates but save the water and set aside.
- Place the dates, almond butter (or applesauce), vanilla extract, and 2 T of the date water into food processor, and process till well mixed and smooth. Might have to add a wee bit more of the date water if too thick.
- Stir the date mixture into the dry ingredients and mix well. (What I did was put half of the mixture into food processor to blend well, and then the other half so all mixed well.)
- Using 1 T scoop, put cookie dough on sheet and then press down each cookie so it's flat.
- Bake for 13-14 minutes. Check after 10 minutes to make sure not over browning!
