This comes from Cathy Fisher and her fabulous site: www.straightupfood.com. It's having your apple pie without the fat and sugars from pie crust. One of my favorite 'go-to' desserts. Her recipes are the best: oil, sugar, and salt FREE!


Topping:

1/2 cp walnuts
2 pitted dates
Diced Apples:
3 apples, peeled and diced
1 T lemon juice


Apple Sauce (This sauce will be mixed with the diced apples above.)
2 apples, peeled and diced
2 T fresh lemon juice
5 pitted dates
1/4 cps raisins
1/4 tsp cinnamon
1/4 tsp nutmeg


Topping: Blend the walnuts and dates in food processor until the texture is similar to Grape Nuts. Spoon into a small bowl and set aside.

Filling: Toss the 3 peeled, diced apples with 1 T lemon juice and set aside in a bowl. Next, in the food processor, blend all of the sauce ingredients. Toss this mixture with the diced apples.

To serve: Place 1/4 of the apple filling into 4 small dessert dishes and sprinkle with the date nut topping.

You can make this dessert using pears instead of apples. This is an easy, refreshing, and healthy dessert.
