This recipe is from the Cancer Project - chock full of nutritious berries and tofu.


1 package (12.3 oz) reduced fat, extra-firm silken tofu, drained well and crumbled. (To drain tofu well, squeeze in clean, white cloth.)
2 3/4 cps frozen, unsweetened berries of your choice. (I like to use a bag of mixed berries - strawberries, blackberries, raspberries and blueberries.)
2 T agave nectar
1 T berry Liqueur (optional)


Blend all ingredients in high powered blender until smooth. Spoon into serving dishes and chill for a few hours before serving. This can be enjoyed as a dessert pudding or a topping over fruit.

Makes 4 servings.
