My daughter-in-law raved about this recipe from a Food for Life Class she attended in Naples. Give it a try. It's really good, easy, and healthy.

Ingredients:

  • 1 box of your favorite cake mix (I used Spice Cake) (You can find organic and gluten free in a whole foods or organic market.)
  • 4 cups grated veggies (I used 2 medium size zucchini and 2 carrots - lightly packed in 4 cup measurer)
  • 3 flax eggs (3 T ground flax mixed with 9 T very warm water - let it gel.)

Mix all ingredients together with electric mixer, put batter in two lightly greased or non-stick 9" cake pans, and bake at 350 for 35 minutes. Test with toothpick to see if done. Let cake cool in pan on wire rack for 10 minutes before removing to completely cool.

For this cake I frosted with non-dairy cream cheese frosting. If using chocolate cake mix, you can make a fabulous frosting by boiling one large sweet potato peeled and cut in chunks. When potato is cooked, place hot potato in high speed blender or Vita Mixer with 1 cup non-dairy chocolate chips and mix well. The frosting is surprisingly a winner!

You'll be amazed at how moist and delicious this cake is. Try it; you'll like it.
