I have a few mousse recipes on the site. This from Ayurvedic Practitioner, Xiomy Dynega. It's higher in fat due to the avocado, but as a once in a while dessert, it's a real tasty treat. Serves 4.
- 2 large ripe avocados
- 2 T raw cocoa powder
- 1/4 cup coconut milk or almond milk
- 1 1/2 T maple syrup
- 1 tsp vanilla extract
- 1/2 tsp cardamom powder
- pinch of salt for 2 avocados.
Puree the avocado in blender until smooth.
Mix together the cocoa powder, cardamom, milk, vanilla extract and maple syrup until combined, and then add to the pureed avocado.
Puree all until smooth. The mixture will be very thick so add a little more non-dairy milk as needed.
Serve with fresh raspberries. What a treat!
