Chef AJ's recent cookbook, "Unprocessed", is chock full of simple, healthy dishes, all with unprocessed ingredients. AJ's a gem. This stroganoff is so easy to prepare, but with gourmet taste. Your friends will think you spent hours in the kitchen!


Sauce Ingredients:

1 box Mori-Nu Silken Tofu (12.4 oz)
1/2 cup water
3 T fresh lemon juice (include the zest from the lemon)
3 T low sodium tamari
2 T tahini
2 cloves garlic
1 inch piece of ginger


Place above ingredients in high speed blender or Vita-Mixer, and blend until very smooth.

Filling Ingredients:

1 red onion, minced
1 pound portobella mushrooms, sliced
1 tsp oregano
chopped Italian parsley, for garnish

Water saute the onion until its translucent. Add the mushrooms and saute until they become limp and moisture has evaporated. Stir in the oregano. Pour sauce over and mix well. Garnish with fresh parsley.

Recipe goes well served over brown rice or noodles.
