A quick, lovely, and and healthy dinner.

1 large or 2 small bundles of fresh asparagus
1 small onion, chopped
2 T veggie broth, water or white wine
2 cups cooked brown rice or other favorite rice
salt and pepper to taste
vegan parmesan cheese

Cut off and discard the hard ends of the asparagus stalks. Wash asparagus. Cut into thirds. Set aside. In small frying pan add the water, broth or wine and saute the onion until soft and translucent, being careful not to brown. Add the asparagus and pepper. Stir for a few minutes until the asparagus is heated. Add filtered water to cover the asparagus and simmer until it is soft and fully cooked. Keep mixture at soupy consistency adding water as necessary.

While asparagus is cooking, prepare rice according to package instructions. When all is finished, ladle the asparagus mixture over the rice into soup bowls.

Sprinkle with salt, pepper and grated cheese.

This quick dinner, with grain bread and side salad, fills the bill!
