After trying different Blueberry Muffins recipes - some too sweet, some too bland, I created my own, and I like it. Imagine - a tasty, warm muffin sans oil, butter and eggs!! Hope you enjoy!

Ingredients: Dry

1 cup spelt flour
1 cup oat flour
2 tsps baking powder
1/2 tsp baking soda
4 T coconut sugar or organic sugar
1 1/2 tsps cinnamon
1/8 tsp cardamom
zest of 1 medium size orange
Ingredients: Liquid
2 medium bananas, mashed well
1 tsp pure vanilla extract
1 tsp apple cider vinegar
1/2 cup applesauce
3/4 cup oat milk

1 cup fresh or frozen blueberries (If using frozen, do not defrost)

Method: Preheat oven to 350.

Whisk dry ingredients along with orange zest.
In separate bowl, mash the bananas well. Add the vanilla, apple cider vinegar, applesauce, and oat milk to bananas. Mix well.
Make a well in the dry ingredients, add the liquid, and blend gently with wooden spoon JUST till blended. DO NOT overmix. Overmixing causes dense muffins, and we don't want that!
Finally, blend in the blueberries.
Add to non stick muffin pan using muffin cups or lightly oil the pan.
Bake at 350 for 25 minutes. Test with toothpick to make sure they're nicely done. Remove from oven. Gently tip each muffin in the pan. Remove after 10 minutes and cool on wire rack.
