Found this online and looks delicious. I've never been one to like Al Fredo sauce - too rich and full of fat, but this sounds healthy, tasty and nutritious.

1 head cauliflower steamed till done and soft
1/2 cup unsweetened plain almond milk
1 T organic fresh lemon juice
1/4 cup nutritional yeast
1/4 tsp onion powder
2 garlic cloves, minced


Puree the above ingredients in a high speed blender or Vita-mixer. Pour sauce in saucepan and heat on very low, stirring constantly to prevent burning. If too thick, add a wee bit more almond milk. Prepare your favorite whole grain or gluten free pasta, and pour sauce over the pasta.

This with a hearty green salad on the side - YUM!
