This is a basic, easy gravy that can be used over mashed potatoes, grains, UN-meatloaves, or any dish of your choosing that calls for gravy. If you enjoy mushrooms and onions with a splash of seasoning, you'll enjoy this.

1 medium size sweet onion, finely chopped
1 cp portobello mushrooms, sliced
1 small garlic clove, diced
1/4 cp margarine (preferably Earth Balance or Vegan Smart Balance)
1/4 cp organic white flour
4 cps vegetable broth
1 tsp dried ground sage
1/2 tsp dried ground thyme
1/2 tsp dried ground marjoram
salt and pepper to taste


Melt the margarine in medium size saucepan. Add the onions and mushrooms and saute till soft (about 3 minutes). Add the flour to the onions and mushrooms and stir till very well mixed. Keep stirring and slowly add the vegetable broth to onion/mushroom mix. Then add all the spices. Cook the gravy over medium heat while you continue to stir. Bring the mixture to a rolling boil. Once boiling, reduce the heat, keep stirring, and let the mixture thicken. For thicker consistency, add a bit more flour to a tsp or two of very cold water. Mix that well and then add to gravy till desired consistency. When done taste for seasoning.

Note: To lower fat content, instead of sauteing onions & mushrooms in non-dairy margarine, saute in a little vegetable broth, white wine or water. Works just as well.
