This delicious soup recipe came from another Food for Life class participant at our last class potluck. It is so tasty; I could have eaten the entire bowl. Cauliflower is a member of the Brassica family of veggies. Cauliflower contains sulfur-containing phytonutrients that cleanse the body of damaging free radicals. Its cancer fighting compounds encourage production of enzymes that aid in detoxification and even kill some cancer cells. So next time you're shopping, give that cauliflower a thank you hug! 1 large cauliflower
1 large carrot
3 cups vegetable broth
1 cup almond milk
1 tsp curry powder
salt and pepper to taste


Place all ingredients in soup pot and bring to a boil. Then reduce heat and simmer for 30 minutes till cauliflower has softened. Puree soup either in food process or an immersion blender. Taste for additional seasonings and enjoy. Served with a side salad, this is a perfect meal!
