Great meal for a cool, Autumn night!


2 lbs. Swiss chard, discard stems and cut leaves crosswise in 2-inch strips
3 garlic cloves, thinly sliced
1/4 tsp crushed red pepper
1 (26 oz) can diced tomatoes
1 (15 oz) can cannellini beans, drained and rinsed
1/2 tsp salt
1/4 tsp pepper


Add the Swiss chard to a large pot of boiling water and simmer over moderate heat until tender, (about 8 minutes.) Cool slightly, then drain and squeeze out excess liquid.
In a little water saute the garlic and crushed red pepper until garlic is golden. Make sure it doesn't burn. Add more water as needed for sauteing.
Add tomatoes and bring to a boil. Add the beans and simmer over moderately high heat for 3 minutes Add the Swiss chard and simmer until flavors meld, about 3-4 minutes. Season with salt and pepper and serve.
