My mother loved butternut squash, and this dish was a frequent guest at our table. Given our Italian Sicilian heritage, Amaretto was a must addition.


2 butternut squash, halved
3 T brown sugar
4 T maple syrup or brown rice syrup
1 1/2 tsps cinnamon
1/4 tsp nutmeg
2 T Amaretto or Kahlua (optional-can add to sugar/spice mix.)


Preheat oven to 350.

Halve the squash. Remove seeds. Place squash, faced down on baking sheet, and bake for 45 minutes.

In small bowl, mix the brown sugar, the maple syrup or brown rice syrup, and spices. Carefully turn the squash over and spread the mixture over the squash. Bake for another 15 minutes.

Can add some raisins to the mix if you'd like!
