A wonderful, sweet holiday recipe!

After perusing many holiday side dishes, I put this together for Thanksgiving. It received rave reviews. Hope you enjoy. Sweet potatoes are loaded with antioxidants - a great veggie to enjoy a few times a week.

3 lbs. sweet potatoes
3 Granny Smith organic apples
3/4 cp dried cranberries or raisins
3/4 cp toasted pecan pieces
3 T dark rum
1/4 cp agave nectar
1/2 tsp ground allspice


In small bowl, mix the rum, brown sugar, agave, and allspice. Set aside. Peel and slice the sweet potatoes. Peel and slice the apples.

Preheat oven to 350. Lightly grease a mid-size baking pan. Place a layer of sliced sweet potatoes on bottom of pan. Then top with a layer of sliced apples. Sprinkle with some cranberries or raisins. Sprinkle some toasted pecans over the apples. Repeat the layers. Then sprinkle potatoes and apples with the mixed liquids and spices.

Bake for about 1 hour, checking to see if potatoes are done.
