• 7 large carrots, cut in cubes
  • 1/8 cup sunflower seeds roasted
  • 1/4 tsp minced garlic
  • 3/4 tsp curry powder
  • 1/4 tsp cumin
  • 1 1/2 T fresh lemon juice
  • sea salt to taste
Bring water in small pot to a boil. Add the carrots and boil for 10 minutes till tender.
Let carrots cool completely.
Grind the roasted sunflower seeds. Put aside.
When carrots are cool, add to food processor with all the other ingredients. Blend till smooth.
Taste and adjust seasonings. You might want to add more curry or lemon juice. You'll know after you make it the first time. This recipe makes about 1 cup/dip.
 
Nice with cut up veggies or 'healthy' crackers!
