This cheese sauce is loaded with healthy beta-carotene!

  • 1 medium sweet potato, peeled and diced into 1/2 - 1 inch cubes
  • 1/4 cup coconut or other favorite non-dairy milk
  • 1 1/2 T olive oil
  • 2 T soy sauce
  • 2 T lemon juice
  • 1 T sriracha sauce (or to taste)
  • 1/2 tsp garlic powder
  • 1/4 tsp salt or to taste

Place sweet potatoes into pan and cover with water. Bring to boil on high then lower heat and allow to simmer for about 15 minutes till done. Drain well and allow potatoes to cool.

Place the sweet potatoes and all ingredients in food processor and blend until smooth.

Note: The original recipe called for 3T of oil; that's a lot of unnecessary fat calories. I reduced recipe to 1 1/2 T, but I would try without oil at all. I'm sure it will be just as good and far healthier!
