This tasty, healthy dish was prepared by one of my Food for Life class participants for our final pot luck celebration. This recipe can be prepared as an appetizer in bite size pieces, or formed into larger patties for a main dish.
Recipe makes 24.
1 cup cooked quinoa (Recipe had mixture of red quinoa, basmati brown rice, and freekeh)
1 eggplant, steamed, peeled, then chopped
1/4 cup nutritional yeast
1/4 cup Texas Pete Buffalo wing sauce (has no oil) or hot sauce
1/4 cup panko crumbs or bread crumbs with no oil
1 1/2 tsps Ener-G egg replacer
2 T whole wheat flour (can used spelt flour instead)
salt and pepper to taste
Preheat oven to 350.
Line a cookie sheet with parchment paper.
Combine all ingredients. Add more crumbs if too moist.
Form into small bite size patties.
Bake for 18-20 minutes.
These bites go well with Faux Dipping Mayo or a Marinara Dipping Sauce. (Check out sauces and dressings.)
Freekeh is a grain in the wheat family. It is related to quinoa and farro, though it has more fiber than most grains. With a low glycemic index, it is well tolerated by diabetics.
