This recipe has only 8 ingredients. Easy to prepare. A nice quick bread for morning.

  • 1 cp Bob's Red Mill Muesli *
    1 1/2 cps whole wheat flour
    2 tsps baking powder
  • 1 tsp cinnamon
    1/2 tsp salt
    zest from one orange
    1 cp plain almond milk
    1 T canola oil

* This bread has no added sugar, but Bob's Red Mill Muesli has 5 gms sugar. If you don't care to use that brand, you can make your own muesli using equal amounts of the following:
almonds, walnuts, flax seeds, sunflower seeds, raisins, oats, whole grain rye, whole grain barley.

Preheat oven to 450.

In large bowl, mix the muesli, flour, baking powder, orange zest, cinnamon, and salt.
In another bowl, stir the almond milk and canola oil.
Combine both mixtures and stir till a soft dough forms. This dough is sticky so coat hand with flour for handling ease.
Form dough into a loaf on a slightly greased baking sheet or on parchment paper.
Bake for about 20 minutes, or until bread makes hollow sound when tapped.
Remove from oven and cook on a wire rack.
Once cool, slice, and enjoy!
