I found this enticing recipe in a publication called "Health and Happiness" that is given out gratis at many natural food stores. I am including the original recipe here, and then under it the changes I made to create a 'healthier' plant based quick bread. Want to show how easy it is to morph a recipe from high fat to healthy. So read on:

Original:

  • 1 cup organic low fat French Vanilla Yogurt (Animal protein)
  • 1 cup quick-cooking oats
  • 1 egg or two egg whites, slightly beaten  (Here's the cholesterol!!)
  • 1/4 cup canola oil (Remember, 1 T oil contains 120 calories and 9 grams of fat.)
  • 1/2 cup packed brown sugar
  • 2/3 cup all-purpose flour (white flour???)
  • 2/3 cup whole wheat flour
  • 1 tsp baking soda
  • 1 tsp ground cinnamon
  • 1/4 tsp salt
  • 1 cup diced apples, peeled or unpeeled

Healthy Changes:

  • 1 cup dairy free vanilla yogurt
  • 1 cup quick-cooking oats
  • ener-g egg replacer for 2 eggs (2 T egg replacer mixed with 4 T water.)
  • 1/4 cup applesauce (instead of oil - works well)
  • 1/2 cup packed brown sugar
  • 2/3 cup spelt flour
  • 2/3 cup whole wheat flour
  • 1 tsp baking soda
  • 2 tsps cinnamon (I added more!)
  • 1/2 tsp nutmeg
  • 1/4 tsp salt
  • 1 cup diced apples, peeled or unpeeled

Heat oven to 350. Spray loaf pan with cooking spray or lightly coat with oil to prevent sticking.

In a small bowl, mix together the yogurt and oats and then set aside.

In small bowl mix the 2 T egg replacer with 4 T water. Beat well and set aside. Will thicken.

In a large bowl, mix together the egg replacer, 1/4 cup applesauce, and brown sugar. Mix well. Then to that stir in the flours, baking soda, cinnamon, nutmeg, salt and yogurt mix. Stir very well. Then fold in the diced apples.

Pour into greased pan. Bake for 45 minutes until golden brown or until toothpick inserted comes out clean.

I made the original version, using non-dairy yogurt and egg replacer but added the oil. The healthy version tastes even better. Very tasty quick bread.

You can also add chopped walnuts and/or raisins if you wish. Enjoy!!
