Walla - get out your trusty waffle maker and go to it. You can serve waffles with pure maple syrup and/or fruit on top.


When I was little, my mother would often make waffles Sunday evening as a snack since we always enjoyed our main meal mid afternoon. She would top the waffles with ice cream.
Now you can use either non-dairy ice cream, or better yet, make your own banana ice cream and pour on the top. So good.

1 3/4 cups spelt flour (or white- whole wheat flour, or combination of both)
1/2 tsp baking powder
1/4 cup almond meal
1/4 tsp ground cinnamon
2 T grated orange zest
1 T rice vinegar
2 T ground flax seed mixed with 6 T warm water.
1/4 cup organic applesauce
1/2 cup fresh orange juice
3 T brown rice syrup
1/2 cup non-dairy almond milk
frozen wild, organic blueberries (or other berries you enjoy)


Mix the ground flax seed with warm water, stir well, and set aside to gel.


In large bowl, whisk together the flour, baking powder, almond meal, cinnamon, and orange zest.


In smaller bowl mix the liquid ingredients together: the rice vinegar, applesauce, orange juice, brown rice syrup, almond milk, and the flax mixture. After mixing well with whisk, add to dry ingredients, and stir well with wooden spoon.


If batter appears too thick, add a bit more almond milk.
Gently fold in blueberries.
