This is my favorite pancake recipe. Adapted from:, the website of Food for Life Instructor in Sarasota, FL, Evelisse Capo. I made a few changes and additions to her wonderful recipe. Thanks, Evelisse, for giving permission to post your breakfast treat!

This recipe serves 6:


4 cups rolled oats (processed in high speed blender or use oat flour)
1/2 cup millet (process millet till flour-like) or use millet flour
1 tsp sea salt
1 1/2 tsps baking soda
2 tps baking powder
1/2 cup ground flax
1/2 tsp cinnamon
zest from 1 orange
4 cups almond milk
2 T rice vinegar
1 T agave nectar or maple syrup
1 T pure vanilla extract
3 T organic unsweetened applesauce

Mix the dry ingredients in large bowl. In separate bowl, mix the wet ingredients till well blended. Add the liquid into the dry ingredients and mix all well. Transfer the batter to a high speed blender, like a Vita-mixer or other high speed blender, and mix. Let batter sit for a few minutes. Walla - have your griddle heated and you're ready to go. Enjoy!
