Joan from Cape Cod shared this recipe. Great for company.
2 cups old-fashioned oats
4 cups almond, rice or soy milk (I use almond for this recipe.)
1/4 cup brown sugar
1 tsp cinnamon
1/2 tsp either almond or vanilla extract (I use vanilla if using walnuts and almond if using almonds!)
1/2 cp dried cherries or cranberries or raisins (your choice)
1 large apple, grated (or finely chop)
Mix all ingredients together and put in greased 9 x 12 pan. Bake, uncovered, at 400 for 45 minutes.
