I've had fun trying a variety of overnight Breakfast Treats. Prepare at night, put in frig, and, walla, breakfast is all ready in the morning. Give these a try!!

Blueberry, Walnuts and Overnight Oats (my favorite)

  • 1/2 cup rolled oats
  • 1/2 cup of your favorite non-dairy milk
  • 1/2 cup frozen blueberries
  • 1 tsp chia seeds
  • 1 T maple syrup
  • 1 T crushed walnuts

Mix all ingredients in mason jar. Stir well until the oats are thoroughly coated in the liquid. Place lid on jar and refrigerate. In the morning you might have to add a little more of your non-dairy milk.

Raspberry, Coconut, Almonds, and Overnight Oats

  • 1/2 cup rolled oats
  • 1/2 cup favorite non-dairy milk
  • 1/2 cup of raspberries (fresh or frozen will work)
  • 1/8 tsp almond extract
  • 1/8 tsp cinnamon
  • 1 tsp raw honey
  • 1 tsp shredded coconut
  • 1/2 T sliced almonds

Add the oats, raspberries, milk, cinnamon, extract, and raw honey in a pint sized glass mason jar. Stir ingredients to combine well. Close jar and refrigerate overnight. (It is recommended to keep in frig for 2-3 days!) When ready to enjoy, add the almonds and coconut.
