Tofu works like eggs when it comes to French Toast, but without the cholesterol and saturated fat.
- 8 ounces low-fat silken tofu
- 1 ripe banana
- 1 /2 cup non-dairy milk (soy, almond or oat)
- 1 tsp maple syrup
- 1 tsp cinnamon
- 1/4 tsp nutmeg
- 2 T nutritional yeast
- 1/8 cup finely chopped walnuts (optional)
Toast bread slices first. Use a hearty whole grain bread for French Toast.
Blend all ingredients in food processor. Dip toasted bread in batter and brown on your favorite griddle!
Leftover French toast will keep for 2 days in frig. Enjoy!!
