This recipe compliments of Rip Esselstyn in his "Engine 2 Diet". Full of fiber and devoid of saturated fat and cholesterol. Can you imagine a cookie without eggs and oil? You can do!!

Makes about 2 dozen.

1 cp unsweetened applesauce
2 T ground flaxmeal mixed with 1/4 cp warm water
2/3 cp light brown sugar, packed
1/2 cp raw sugar
1 T Ener-G egg replacer mixed with 1/4 cp warm water
1 tsp vanilla extract
1 1/2 cps whole wheat pastry flour
1 tsp ground cinnamon
1/4 tsp ground nutmeg
1 tsp salt
1 tsp baking soda
3 cps rolled oats
1 cp raisins (or craisins)


Preheat to 375. Combine the applesauce, flaxseed mixture, and the sugars with an electric or hand mixer. Beat in the Ener-G mixture and vanilla extract. In a separate bowl, combine the flour, spices, salt and baking soda. Gradually mix the dry ingredients with the wet ingredients until thoroughly combined. Stir in the oats and raisins. Place rounded, heaping tablespoons of dough onto a sprayed or parchment lined cookie sheet and bake for 12 minutes. Let cookies cool on wire rack.
