• 1 cup Earth Balance or other non-dairy margarine, softened
  • 1/4 cup organic sugar
  • 1/4 tsp salt
  • pinch of baking powder
  • 2 cups organic all-purpose flour (can use whole wheat pastry flour, too.)
  • 1 cup coarsely chopped walnuts
  • about 1 cup confectioner's sugar

In medium bowl mix the non-dairy margarine, sugar, salt and baking powder. Stir in the flour and walnuts. If mixture is too soft to handle, cover and chill in frig for several hours.

Heat oven to 300. Roll heaping teaspoons of dough into 1-inch balls and place on cookie sheet lined with parchment paper. Bake about 50-60 minutes until lightly browned.

Cool the walnut balls on wire rack for 30 minutes. Fill a paper bag with the cup of confectioner's sugar, and and then gently shake about 4 balls at a time in the bag so balls are well coated. Cool the balls for another 30 minutes on a rack and then roll again in the confectioner's sugar a second time!

Store in an airtight container in freezer.
