Makes approximately 24 cookies!

  • 1/3 cup unsweetened organic applesauce
  • 1/3 cup almond butter
  • 1/2 cup dry sweetener (using monkfruit sweetener)
  • 1 T ground flaxseeds
  • 2 tsps vanilla extract
  • 1 1/3 cups oat flour
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/4 cup whole wheat pastry flour
  • 1/2 cup non-dairy chocolate chips

Preheat oven to 350.

In large bowl, beat together the applesauce, almond butter, sweetener, and flaxseeds. Once relatively smooth, mix in the vanilla.

Add the oat flour, baking soda, and salt, and mix well.

Add the whole wheat pastry flour and chocolate chips and mix well.

Line cookie sheet with parchment paper and drop spoonfuls of batter onto the baking sheets. Bake for 8 - 10 minutes. 

Remove from oven and let cookies cool on baking sheet for 5 minutes before moving them to cooing rack.
