• 11 - 12 Medjool Dates of 24 Deglet Noor dates, chopped
  • 1 cup oat flour or rolled oats ground into flour
  • 1 1/2 cups old fashioned oats
  • 2 tsps baking powder
  • 1 tsp cinnamon
  • 1/4 cup plus 2 almond butter (or for lower fat, use 1/2 cup applesauce in place of almond butter)
  • 1 1/2 tsps vanilla extract
  • 1/2 cup raisins or dried cranberries or chopped dried apricots
  • 1/2 cup walnuts, chopped
  1. Place dates in small bowl. Cover with water and let sit for 15 minutes to soften. 
  2. Preheat oven to 350. Line baking sheet with parchment paper.
  3. In medium bowl whisk the oat flour, oats, baking powder and cinnamon.
  4. Pour water off the dates but save the water and set aside. 
  5. Place the dates, almond butter (or applesauce), vanilla extract, and 2 T of the date water into food processor, and process till well mixed and smooth. Might have to add a wee bit more of the date water if too thick.
  6. Stir the date mixture into the dry ingredients and mix well. (What I did was put half of the mixture into food processor to blend well, and then the other half so all mixed well.)
  7. Using 1 T scoop, put cookie dough on sheet and then press down each cookie so it's flat.
  8. Bake for 13-14 minutes. Check after 10 minutes to make sure not over browning!
