• 1 1/2 cups whole wheat pastry flour plus 1 T
  • 1 1/4 tsps ground ginger
  • 1 tsp cinnamon
  • 1/4 tsp ground cloves
  • 1/4 tsp ground nutmeg
  • 1 T cocoa powder
  • 1/2 cup vegan margarine
  • 1/2 cup brown sugar
  • 1/4 cup molasses
  • 1 tsp baking soda dissolved into 1 1/2 tsp boiling water
  • 1/4 cup sugar (to coat before baking)

Whisk together the flour, spices, and cocoa powder. 

In another bowl, beat the vegan margarine and brown sugar until well combined and fluffy.

Add the molasses to the mixed margarine and sugar. Then add half the flour mixture and the baking soda to the margarine, sugar, and molasses mixture and combine well. Then add the rest of the flour mix.

Chill dough, cover, and chill in frig for 1 hour.

Then roll into balls, and roll each ball in the sugar. 

Bake for 13 - 15 minutes till done.
