This recipe was brougtĀ to our June 2015 Green Nosh, and it was a big hit! Gluten free, too! Thanks, Mary Jane!!


The Sweet Fruit: Apricot, Cherry, Coconut and Almonds

1/2 lb dried apricots
1/4 lb dried unsweetened cherries
1/4 lb shredded dried unsweetened coconut
1 T vegan margarine
1 tsp vanilla
Process above in food processor, till ingredients hold together.

Date and Pecan:
20 dates
20 pecan halves or 1 1/2 cps pecan pieces
1 T vegan margarine
1 tsp vanilla
Process ingredients as above.

Form both varieties into 1 inch balls - about 20 each variety.
Place the balls on parchment paper lined plates.
Melt 3/4 cp gluten free vegan chocolate chips and 2 T coconut oil for about 1 1/2 minutes in microwave. Stir to mix. Drizzle over the balls. Turn each and repeat. Very tasty!!
