This is a quick and easy topping for pies, cobblers and fruit - from Dr. Neal Barnard's "Program for Reversing Diabetes".

1 12 oz box firm lite tofu (I like to use Nori-Mu in aseptic boxes.)
3 T fresh lemon juice
1 T lemon zest
1/3 cup either pure maple syrup or agave nectar

Puree ingredients either in blender or food processor, and refrigerate. How easy is this?!

Enjoy this cream without the saturated fat and casein that's in dairy!!
