This delicious, easy to prepare chocolate treat is from Rip Esselstyn's informative cookbook, "The Engine 2 Diet". His recipes are not only healthy, but easy to prepare and tasty, too!

Crust:

1 cup dates (I use Medjool dates)
1/3 cup walnuts
1/3 cup almonds
1/3 cup cashews
1 tsp pure vanilla extract


Filling:
2 bananas, sliced lengthwise (do not blend)
Chocolate Mousse (recipe below)
fresh strawberries or raspberries

Blend the dates, nuts and vanilla in a food processor to achieve a sticky consistency. Press the crust ingredients into a pie pan. Lay the bananas on top of the crust and press along the sides. Cover the crust with the chocolate mousse filling, and top with the fresh fruit. How easy is this?
You can use the mousse recipe below or my other mousse recipe which is from our PCRM Food for Life program. Both are yummy.

Chocolate Mousse:
1 package Silken Lite tofu
2 T cocoa powder
1/4 cup non-dairy chocolate pieces (my addition)
1 tsp vanilla extract
1/3 cup maple syrup or agave nectar

I melted the chocolate pieces with about 3 T non-dairy milk in microwave. Then I added all the ingredients plus the melted chocolate in a high speed blender.
