A healthy, satisfying dessert or any time treat! Chia seeds, like flax seeds, are lauded for their high Omega-3 content, and gel-like properties. However, unlike flax seeds, you do not have to grind the chia seeds to obtain their nutrients.

3/4 - 1 cup unsweetened almond milk (or non-dairy milk of your choice)
1/4 cup chia seeds
5-6 pitted Medjool dates
2-3 1/2 T unsweetened cocoa powder
1/2 tsp pure vanilla extract
pinch sea salt

Pour the almond milk into a high speed blender. Add the rest of the ingredients and blend until smooth. Chill around 8 hours or overnight.
Note: You may want to add just the 2 T of cocoa powder, mix, then taste. If needed, add the rest of the cocoa powder. Depends on your taste for chocolate!!
