Rice Pudding and Pears are a delectable combination. Nice for dessert or for breakfast.

1 cup uncooked arborio rice
5 cups unsweetened plain almond milk
2 T almond milk
2 cups diced dresh pears
1/4 cup agave nectar or rice syrup
1/2 tsp cinnamon
1/4 tsp nutmeg
1 tsp vanilla extract


In a heavy saucepan, combine the rice with the non-dairy milk, pears, agave, cinnamon, and nutmeg.

Bring to a simmer and cook uncovered over medium heat for about 15 minutes. Stir frequently to prevent sticking and burning. Cook until rice is tender and the liquid has reduced to a thick sauce-like consistency. Stir constantly for last 5 minutes to prevent scorching.

Turn off heat and stir in the remaining non-dairy milk and the vanilla extract. Cover and let stand for 5 minutes. This is nice with some freshly grated nutmeg on top.
