2 cups silken tofu - soft
1 cup either soy milk or almond milk
1/2 - 1 cup dry sweetener (1/2 cup is sufficient)
1/4 cup dark cocoa powder
1 T vanilla extract
dash of salt
Blend all the ingredients in a food processor to a very smooth, creamy consistency. Place in a sealable container and freeze overnight.
Remove from the freezer and defrost for 20-40 minutes. Place back in food processor and blend again. Spoon back into container (at this point you may add chocolate chips or whatever you wish to add.......maybe some dried chopped cranberries) Then refreeze again. When ready to use, spooning out will be easier if you let it defrost awhile.
I haven't tried this, yet, but it's on my list. Right now my mouth is watering, but I'll satisfy with some air popped pocorn!
