My dear friend and helper with our Food for Life classes, Karen S., shared this recipe. A nice bit of dark chocolate - 'every now and then' - is a satisfying treat, and loaded with some helpful antioxidants.


Ingredients: (Just 3 - how easy is this?!)

1 (10 oz) bag of vegan dark chocolate chips
1/2 cup chopped raw almonds or walnuts
1/2 cup dried cranberries or blueberries


Method:

Line a cookie sheet with wax paper
Melt the chocolate in a double boiler.
Pour melted chocolate onto cookie sheet.
Sprinkle fruit and nuts on top of the chocolate, and gently press into the chocolate
Refrigerate for 2-3 hours till firm. Break into small bite size pieces. Can store in freezer.
