A dessert that is chock full of healthy berries, and low in fat! Garnished with shaven bits of dark chocolate or soy whip cream, this dessert is sure to please.
2 1/2 cps mixed frozen berries - unsweetened
1 package extra firm silken tofu (in aseptic package), crumbled
2 T agave nectar (for sweetener)
Process all ingredients in food processor till nicely blended. Mixture should have consistency of a thick mousse. You can sprinkle top with mixture of fresh raspberries and/or blueberries. The combinations are endless. This is easy, tasty and nutritious. To make it lower in fat, buy the low-fat, silken tofu.
