This delicious treat was prepared by one of my Food for Life participants for our final class potluck celebration. Enjoy! Very tasty!
- 1 cup pitted dates
- 1 1/4 cups raw cashews
- 1 navel orange - zested
- 1/4 tsp either ground cardamom or nutmeg
- 1/2 cup coconut flakes
Ground dates in food processor until smooth; add cashews and continue processing until finely ground. Note: the nuts were finely ground using the food processor.
Transfer mix to large bowl and mix remaining ingredients. Divide and shape into 1 inch round balls. Spread coconuts onto a shallow dish and roll balls in coconut to coat. If coconut hard to stick, add to mixture before turning into balls. Might have to press the balls into the coconut as you roll.
