Thanks to Barb, one of my Food for Life participants, for this recipe. According to Barb the recipe is a winner.

Crust:

  • 2 cups almonds, soaked, not dried (manganese and alkaline forming for the body)
  • 8 deglet dates soaked (can add a little water)

Filling:

  • 12 deglet dates
  • 12 peaches (natural source of copper)
  • 1 pint blueberries
  • 1 tsp psyllium
  • 3 bananas

Preparation:

The Crust: Grind crust ingredients together in food processor and mix into dough consistency and form into pie plate. Barb said she used a rectangular pyrex pan. (This crust is great for any raw pie.)

The Filling: 1 peach sliced, 12 dates, soaked, 3 bananas, grind those ingredients together in food processor. Peel and cut remaining peaches into thin slices, fold in the blended mixture with 1 tsp psyllium powder, and fold into pie crust. Top with blueberries and serve.
