One of our Green Nosh members on Cape Cod shared this yummy snack at one of our monthly gatherings. Enjoy!

  • 2 carrots
  • 1 cup raw almonds
  • 1 cup raw walnuts
  • 6 dates
  • 1 tsp vanilla extract
  • 1/4 cup oats
  • 1 tsp pumpkin pie spice
  • 1 tsp raw honey
  • 1/4 cup shredded coconut for rolling

Place all ingredients into a high speed blender or food processor. Blend until all ingredients are a large crumb size. Roll into any size ball and then roll in the coconut as as topping. (Store in airtight containers or in refrigerator.)
